Three Paradise Valley resorts have made dining news since summer, and each one points to a different timeline. Kimpton Miralina is adding Arizona's first Katsuya in early 2027. Sanctuary Camelback Mountain has new local owners, but its kitchens are not scheduled to change until 2028. The Ritz-Carlton Paradise Valley and The Palmeraie remain unfinished, and their future depends on a bankruptcy vote set for November. Taken together, the town's resort tables will look much the same through most of 2027. The one dated addition is on Scottsdale Road.
That matters more here than it would in most places. Paradise Valley has very little standalone commercial space, so resort restaurants do much of the work that a neighborhood restaurant row does elsewhere. When a resort changes its timeline, the town's dining options change with it.
| Resort | What changed | When dining changes |
|---|---|---|
| Kimpton Miralina Resort & Villas | $70 million final phase begins unveiling | Katsuya scheduled for early 2027 |
| Sanctuary Camelback Mountain Resort & Spa | Independent local ownership announced Sept. 14, 2026 | Food and beverage phase planned for 2028 |
| The Ritz-Carlton Paradise Valley | Hotel incomplete. Chapter 11 plan considers a hotel sale | No opening date. Creditor vote scheduled for November |
The Kimpton Miralina at 7200 N. Scottsdale Road already has one destination restaurant. Hecho Libre, the concept from chef Wes Avila, began serving in early December 2025, KTAR reported. The resort's dining page lists Avila as a two-time James Beard Award finalist and shows breakfast, lunch, dinner and bar hours every day.
The second restaurant arrives with the resort's final phase. The Kimpton Miralina will complete the last stage of its $70 million transformation between Q4 2026 and early 2027, and that stage includes Arizona's first Katsuya, a modern Japanese restaurant built around sushi, sashimi, robata-grilled dishes and premium cuts. According to the resort's June 18 release, sbe culinary director Benjamin Dayag is leading the menu, and the opening is scheduled for early 2027.
Two restaurants make Miralina "one of the only resorts in Paradise Valley with two distinct, chef-driven restaurants," KTAR wrote. When finished, the property will have 404 renovated keys, six pools and 22 event venues. The same phase adds 134 renovated Valley Villas and The Enclave, an onsen-inspired hotel-within-a-hotel.
The construction schedule matters for anyone booking a table this season. The resort's release says Phase One amenities will remain fully operational during the expansion, so Hecho Libre stays open while the rest of the property is built out.
The biggest ownership news of the fall comes from Sanctuary, and it changes less at the table than the headline suggests. On Sept. 14, Sanctuary Camelback Mountain Resort & Spa announced it had moved to independent ownership under a joint partnership between Berger Holdings and RJ Hospitality, two local firms. The Arizona Republic covered the plan two days later as a multimillion-dollar facelift for the 53-acre property.
The order of work is spelled out. Hart+Howerton is the architect and designer of record. All 110 guest rooms and casitas will be renovated starting in Summer 2027, with completion targeted for September 2027. The food and beverage outlets and Sanctuary Spa follow in 2028.
So Elements and jade bar, the two outlets named in the announcement, keep their current Asian-forward menus and mixology programs for now. The resort has not said whether any part of the property will close during construction.
The managing director framed the ownership change around the resort's local guests as much as its travelers:
"Their commitment guarantees that every dollar invested directly enlists the care, character, and world-class service that our neighbors and loyal resort guests have cherished for decades." Laura McIver, Managing Director, Sanctuary Camelback Mountain Resort & Spa
The property opened as a Tennis Ranch Club in the 1950s. Its current programming includes tennis and pickleball clinics, a rotating wellness calendar and what the release calls "community-forward matcha & mahjong weekends." The resort's happenings page lists a Matcha & Mahjong Experience on Friday, Oct. 16.
The town's largest planned dining addition sits at Lincoln Drive and Scottsdale Road, and it has no opening date. Five Star-related entities filed voluntary Chapter 11 cases on Nov. 4, 2025, in the U.S. Bankruptcy Court for the Southern District of Texas. The lead case is In re F-Star Socorro, L.P. The Phoenix Business Journal reported in late September that the bankruptcy plan considers selling the hotel. The plan also covers the incomplete Ritz-Carlton hotel, unsold villas and land earmarked for a luxury shopping center, and a vote is scheduled for November. The available coverage does not give the exact vote date, the sale terms or a buyer.
Part of the project is occupied. The first villa residents moved in March 2024, the Arizona Republic reported. In December 2025, a bankruptcy ruling allowed villa sales to proceed, with liens attaching to the sale proceeds rather than to the homes.
The debtors' court declaration describes The Palmeraie as a planned 29-acre retail, dining and experiential district with brands under leases or letters of intent. Mott 32 was announced in 2024 as the resort's signature restaurant. Mott 32's own locations page still lists Scottsdale as "in development." Any new opening timeline for the hotel or its restaurants will likely depend on how the November vote turns out.
With Katsuya still months away and the two larger projects on longer timelines, the dated events this season are at the resorts already operating. These are scheduled, so confirm with each venue before you go.
At Omni Scottsdale Resort & Spa at Montelucia, executive chef Rich Hinojosa has been refreshing the menus without a construction schedule. PHOENIX magazine reported in May on new tacos at Taqueria Centro, Arizona beef from K4 Ranch on Prado's steakhouse menu, and pop-up wine dinners.
Several fall opening lists use "PV" for the redevelopment of the former Paradise Valley Mall site near Cactus Road and Tatum Boulevard. That site is in north Phoenix, outside the Town of Paradise Valley. Harry & Izzy's is now open there at 12770 N. Tatum Blvd. Hudson House is listed as coming in early 2027. These are north Phoenix openings. Inside town limits, the confirmed dining calendar runs through Miralina in early 2027, Sanctuary's kitchens in 2028, and a court vote in November for everything planned at The Palmeraie.
